Ingredients:

  • 1 cup quinoa

  • 1 zucchini, diced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the quinoa thoroughly under cold water using a fine-mesh strainer.
  3. In a saucepan, combine the rinsed quinoa and vegetable broth or water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 to 20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. While the quinoa is cooking, prepare the roasted vegetables. In a large baking dish, combine the diced red and yellow bell peppers, zucchini, red onion, minced garlic, dried thyme, dried oregano, salt, pepper, and 1 tablespoon of olive oil. Toss to coat the vegetables evenly.
  5. Roast the vegetables in the preheated oven for approximately 20 to 25 minutes, or until they are tender and slightly caramelized, stirring once or twice during cooking for even browning.
  6. Once the quinoa and roasted vegetables are ready, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the cooked quinoa and roasted vegetables to the skillet. Stir gently to combine and warm the ingredients.
  7. Adjust the seasoning with additional salt and pepper if needed.
  8. Transfer the quinoa pilaf with roasted vegetables to a serving dish.
  9. Garnish with fresh parsley, if desired, for a pop of freshness and color.
